Ranch Chicken Casserole

A comforting, creamy casserole with tender chicken, vibrant vegetables, and a cheesy topping that is perfect for family dinners.

  • 1 lb Chicken breasts, cubed
  • 1 packet Ranch dressing mix
  • 2 cups Mixed vegetables (broccoli, bell peppers, carrots)
  • 1 can Cream of chicken soup
  • 1 cup Shredded cheese (cheddar or mozzarella)
  • 1 cup Breadcrumbs (panko or regular)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the chicken breasts into bite-sized cubes and place them in a mixing bowl.
  3. In another bowl, combine ranch dressing mix, cream of chicken soup, and a splash of water or milk.
  4. Add the chicken and mixed vegetables to the cream mixture and stir to coat.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Top with shredded cheese and breadcrumbs.
  7. Bake for about 30 minutes, until the cheese is bubbly and the chicken is cooked through.
