Quick and Chewy Cinnamon Sugar Cookies

Deliciously soft and chewy cinnamon sugar cookies with a slightly crispy exterior, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup softened butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ¼ cup granulated sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg, vanilla extract, and ground cinnamon to the mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  6. In a small bowl, combine the granulated sugar and ground cinnamon for rolling.
  7. Scoop out tablespoon-sized portions of the dough, roll them into balls, and then roll in the cinnamon sugar mixture.
  8. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for about 10 minutes until the edges are golden. Let cool slightly before enjoying.

Notes

For a softer cookie, do not overbake. Store in an airtight container for up to a week.
