Quick Blueberry French Toast Casserole

A warm, gooey French toast casserole bursting with juicy blueberries and a hint of vanilla, perfect for busy weeknights or cozy gatherings.

  • 1 loaf of brioche or challah bread
  • 4 large eggs
  • 2 cups milk
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Butter (for greasing the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Cube the bread into bite-sized pieces and place half in the baking dish, followed by half of the blueberries.
  3. In a large mixing bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon until smooth.
  4. Pour the custard mixture over the bread and blueberries. Press down gently to submerge the bread.
  5. Sprinkle the remaining bread cubes and blueberries on top and let it sit for 15 minutes.
  6. Bake in the preheated oven for 30-40 minutes until the top is golden brown.
  7. Let cool for 5 minutes, cut into squares, and serve warm with maple syrup or powdered sugar.

Notes

Feel free to prepare this casserole the night before and bake it in the morning for less stress.
