Delightful cookies that blend creamy cheesecake and pumpkin with warm spices, perfect for autumn treats and gatherings.

Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the pumpkin puree and vanilla extract to the butter mixture, mixing until combined.
  4. In a separate bowl, combine flour, baking powder, and spices. Gradually add to the wet ingredients, mixing until just combined.
  5. Blend the softened cream cheese until creamy. Top each cookie dough ball with a spoonful of cream cheese mixture, swirling to create a marbled effect.
  6. Scoop the dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes until edges are golden and centers appear set but soft. Cool before transferring to wire racks.

Notes

Use room-temperature ingredients for better mixing. Adjust baking times based on your oven.
