Pineapple Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup crushed pineapple, drained
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream together the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet mixture.
  6. Fold in the crushed pineapple.
  7. Drop tablespoons of dough onto the prepared baking sheet, leaving space between them.
  8. Bake for 12-15 minutes or until edges are golden brown and centers are set.
