  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 cup crushed pineapple, drained
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add crushed pineapple and vanilla extract; mix until combined.
  5. In a separate bowl, whisk together flour and baking powder, then combine with wet ingredients.
  6. Scoop tablespoons of dough onto prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 12-15 minutes until edges are golden and centers set.

Notes

Ensure the crushed pineapple is well-drained to avoid a runny dough.
