Pesto Lasagna: A Family-Friendly Adventure

A hearty lasagna layered with homemade pesto, rich cheeses, and optional vegetables or meats, perfect for family meals.

  • 9 sheets lasagna noodles
  • 1 cup pesto (homemade or store-bought)
  • 1.5 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • Optional vegetables or proteins (e.g., cooked spinach, mushrooms, grilled chicken)
  • Olive oil (for drizzling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease your baking dish with olive oil.
  3. Spoon a thin layer of pesto on the bottom of the baking dish.
  4. Place three strips of lasagna noodles over the pesto.
  5. Spread half of the ricotta cheese over the noodles, followed by a layer of mozzarella and a sprinkle of Parmesan.
  6. Add any optional vegetables or proteins.
  7. Repeat the layering process until all ingredients are used, finishing with a layer of mozzarella and Parmesan on top.
  8. Cover with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15–20 minutes, or until the cheese is golden and bubbly.

Notes

Allow to cool before storing. Can be made ahead of time and refrigerated.
