Pecan Snowball Cookies

These delicate Pecan Snowball Cookies melt in your mouth with a tender, crumbly texture and a subtle nutty crunch, coated in powdered sugar for a classic snowy finish.

  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and 1/2 cup powdered sugar until smooth and fluffy.
  3. Mix in the vanilla extract until fully incorporated.
  4. Whisk together the all-purpose flour and salt in a separate bowl.
  5. Add the dry ingredients to the butter mixture, mixing just until a soft dough forms.
  6. Fold in the finely chopped pecans gently.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  8. Bake for 12 to 14 minutes or until the bottoms are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes, then roll them in the powdered sugar.
  10. Once fully cooled, roll the cookies in powdered sugar a second time.

Notes

For faster assembly, chill the dough 15 minutes if it feels too soft to roll. Store cooled cookies in an airtight container at room temperature for up to 5 days.
