Pecan Pie Cupcakes with Brown Sugar Frosting

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup pecans, roughly chopped
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, combine softened butter with both sugars, beating until creamy and light, about 3-4 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract until the mixture is smooth.
  4. In another bowl, whisk together flour, salt, and baking powder, then gradually add to the wet mixture, mixing until just combined.
  5. Gently fold in the chopped pecans with a spatula.
  6. Divide the batter among the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Frost with brown sugar frosting once cooled.

Notes

For a richer flavor, consider adding a dash of cinnamon or nutmeg to the batter.
