  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup chopped pecans
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, beat the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add this mixture to the butter mixture, alternating with the milk, until well blended.
  5. Gently fold in the chopped pecans.
  6. Fill the prepared cupcake liners about two-thirds full with batter and bake for 15-20 minutes until golden.
  7. Allow to cool slightly before transferring to a wire rack.
  8. For the frosting, beat together softened butter, brown sugar, and vanilla. Gradually mix in powdered sugar and milk until smooth.
  9. Frost each cupcake generously with the brown sugar frosting, topping with additional pecans.
