Pecan Crunch Glazed Bites

Delicious bite-sized treats combining buttery oats, crispy rice cereal, and crunchy pecans coated with a creamy glaze.

  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 34 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prep Your Station: Start by lining a large baking sheet with parchment paper. In a very large heatproof bowl, combine the old-fashioned rolled oats, crispy rice cereal, and chopped pecans.
  2. Mastering the Binder: In a medium saucepan, combine the butter, granulated sugar, light brown sugar, and 1/4 cup milk. Place over medium heat and bring to a rolling boil. Stir constantly for exactly 1 minute.
  3. Combine Quickly: Remove the saucepan from heat, stir in 1 teaspoon of vanilla extract, and pour the hot mixture over the oats, rice cereal, and pecans. Stir until everything is well-coated.
  4. Form and Chill: Spoon the mixture onto the prepared baking sheet and shape into mounds. Chill in the fridge for at least 30 minutes until firm.
  5. Whip Up the Glaze: In a bowl, whisk together the powdered sugar, 3 tablespoons of milk, and 1/2 teaspoon vanilla extract until smooth. Adjust the consistency with more milk if necessary.
  6. Glaze and Serve: Drizzle the glaze over the chilled bites and allow them to set before serving.

Notes

Make sure to let the mixture cool slightly before shaping to ensure they hold together. Store in an airtight container for up to one week.
