Onion Soup Chicken Bake

A cozy one-pan meal combining tender chicken and caramelized onions in a rich onion soup sauce, perfect for weeknight dinners.

  • 4 chicken thighs (boneless or bone-in)
  • 2 large onions, sliced thin
  • 2 cups beef or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat the olive oil. Add the sliced onions and sprinkle with a pinch of salt. Stir occasionally for about 5-7 minutes until softened and beginning to caramelize.
  3. Season the chicken thighs on both sides with salt, pepper, and garlic powder. Place them in a large baking dish, ensuring they are spaced out.
  4. In a bowl, mix the broth with the dried thyme. Pour this mixture evenly over the chicken thighs.
  5. Spread the caramelized onions over the chicken.
  6. Cover the baking dish loosely with aluminum foil and place in the oven. Bake for about 35 minutes.
  7. Remove the foil, increase the oven temperature to 425°F (220°C), and bake for an additional 10 minutes until the chicken is golden brown and cooked through.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the oven at 350°F (175°C) for best results.
