Onion Soup Chicken Bake

A heartwarming dish that fuses classic French onion soup flavors with tender baked chicken, topped with melted cheese.

  • 4 bone-in chicken thighs (or drumsticks)
  • 3 large onions, thinly sliced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme (dried or fresh)
  • 1 cup shredded Swiss cheese (or Gruyère)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat, add sliced onions, and sprinkle with salt. Cook for about 15 minutes until caramelized and golden brown.
  3. Season chicken pieces with salt, pepper, and thyme. Place them skin-side up in a greased baking dish.
  4. Lay caramelized onions generously over the chicken.
  5. Pour chicken broth into the baking dish, avoiding direct contact with the chicken to keep the skin crispy.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil and sprinkle shredded cheese over the top. Bake for an additional 15-20 minutes until cheese is bubbly and golden.
