One Pot Creamy Garlic Pasta

A delightful one-pot pasta dish featuring creamy garlic sauce, perfect for busy weeknights.

  • 8 oz spaghetti or fettuccine
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Prep the ingredients by mincing the garlic and chopping the parsley if using.
  2. In a large pot or skillet over medium heat, add olive oil and then the minced garlic, cooking for 1-2 minutes until fragrant.
  3. Pour in the chicken broth and heavy cream, stirring to combine, and let come to a gentle simmer.
  4. Add the pasta, stirring to ensure it is covered in the liquid, letting it simmer for about 10-12 minutes, stirring occasionally.
  5. Once the pasta is al dente and the sauce has thickened, remove from heat and stir in the grated Parmesan cheese until melted.
  6. Taste and season with salt and pepper as needed.
  7. Serve in bowls, garnished with chopped parsley and extra Parmesan.

Notes

For added flavor, consider mixing in sautéed mushrooms, spinach, or a splash of lemon juice.
