Old-Fashioned Cajun Cake

A delightful cake bursting with rich flavors of spices, perfect for family gatherings or casual desserts.

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Optional: nutmeg and cayenne pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, sugar, baking soda, baking powder, salt, and cinnamon; whisk well.
  3. Add milk, vegetable oil, and eggs to the dry mixture and whisk until smooth. Be careful not to overmix.
  4. Incorporate vanilla extract and nutmeg (if using).
  5. Pour the batter into a greased 9×13-inch cake pan and spread evenly.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.
  8. Serve warm or at room temperature.
