  • 1 cup Sugar, granulated
  • 1/2 cup Unsalted Butter, cut into pieces
  • 1/4 cup Heavy Cream
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pecans, chopped
  • 1/2 cup Dried Cranberries
  • 2 cups Rolled Oats
  • 1/2 teaspoon Salt

Instructions

  1. Prep your ingredients by roughly chopping the pecans and measuring the cranberries and oats.
  2. In a medium saucepan, combine the sugar, unsalted butter, and heavy cream. Heat over medium and stir frequently until the mixture comes to a gentle boil.
  3. Continue to stir for 2 to 3 minutes until it thickens slightly and turns a light caramel color.
  4. Remove from heat and stir in the vanilla extract and salt.
  5. Add the chopped pecans and dried cranberries, stirring well.
  6. Fold in the rolled oats until evenly coated.
  7. Line a baking sheet with parchment paper. Using a tablespoon or cookie scoop, drop mounds of the mixture onto the parchment.
  8. Let cool completely at room temperature for about 30 to 40 minutes.
