No Bake Avalanche Cookies

A delightful no-bake dessert combining chocolate, peanut butter, and marshmallows with a chewy oat base.

  • 2 cups old-fashioned oats
  • 1 cup peanut butter
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Gather all ingredients and line a baking sheet with parchment paper.
  2. In a medium saucepan over low heat, melt the butter and chocolate chips, stirring continuously until smooth (3-5 minutes).
  3. Remove from heat and stir in peanut butter and vanilla extract until combined.
  4. In a large bowl, combine oats and marshmallows, then pour the chocolate mixture over and stir well.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into mound-like cookies.
  6. Chill in the refrigerator for about 30 minutes to set.
  7. Enjoy once firm, or store for later.

Notes

Store cookies in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. Keep them fresh by lining with parchment paper.
