Mongolian Ground Beef Noodles

A comforting fusion dish featuring ground beef, savory sauces, and fresh vegetables served over egg noodles.

  • 1 lb ground beef (or chosen protein)
  • 8 oz egg noodles (or spaghetti)
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 small onion, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 green onions, chopped, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. Cook the Noodles: In a large pot, bring water to a boil and add the egg noodles. Cook according to the package directions until al dente, about 6-8 minutes. Drain the noodles and set aside, reserving about half a cup of the starchy cooking water.
  2. Brown the Meat: In a large skillet or wok over medium-high heat, add the ground beef. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  3. Add Vegetables: Stir in the diced onion and sliced bell pepper to the skillet. Cook for about 3-4 minutes until they soften and the onions become translucent.
  4. Flavor It Up: Add minced garlic, soy sauce, and brown sugar to the meat and vegetable mixture, stirring for about 1 minute.
  5. Combine with Noodles: Toss in the cooked noodles along with the reserved starchy cooking water, stirring carefully to combine until heated through, about 2-3 minutes.
  6. Taste and Adjust: Adjust the flavor with more soy sauce or sugar, and add freshly cracked black pepper or red pepper flakes for heat.
  7. Garnish and Serve: Plate the noodles and top with chopped green onions and sesame seeds if using.

Notes

Consider substituting ground beef with turkey, chicken or tofu for variations. For a spicier kick, add sriracha or red pepper flakes.
