  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg, lemon zest, and lemon juice, mixing until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients until a smooth, slightly sticky dough forms.
  5. Scoop rounded tablespoonfuls of dough onto the prepared baking sheet, leaving space for cookies to spread.
  6. Bake for 10-12 minutes until edges are lightly golden and tops are soft. Let cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For a different flavor, swap lemon for lime or orange.
