Lemon Oat Bars

Warm, tangy, and satisfyingly chewy, these Lemon Oat Bars are a sunny twist on the classic oat bar, featuring a creamy lemon filling and a buttery oat crumble.

  • 7 Tablespoons unsalted butter, softened
  • 3/4 cup packed light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup old-fashioned whole oats or quick oats
  • 1 (14-ounce) can full-fat sweetened condensed milk
  • 6 Tablespoons lemon juice
  • 1 Tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8-inch square pan with parchment paper.
  2. Beat the softened butter and brown sugar on medium-high speed until well combined.
  3. Add the vanilla extract and continue to beat until fully incorporated.
  4. Add the flour, baking powder, salt, and oats to the bowl, mixing until crumbly.
  5. Press more than half of the mixture into the bottom of the prepared pan and bake for 12 minutes.
  6. Whisk together the sweetened condensed milk, lemon juice, and lemon zest until thickened and smooth.
  7. Pour the lemon filling over the hot crust and sprinkle with the remaining crumble mixture.
  8. Bake for an additional 22 to 25 minutes until lightly browned and set.
  9. Allow to cool completely on a wire rack, then cut into squares.

Notes

These bars store well in an airtight container for up to 2 days or can be refrigerated for up to 5 days. Can be frozen for up to 3 months.
