Homemade Lemon Crumb Bars

Delicious Lemon Crumb Bars with a perfect balance of tart and sweet, featuring a buttery crumb topping and zesty lemon filling.

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar (for crust and topping)
  • ½ cup unsalted butter, melted
  • ½ teaspoon baking powder
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a medium mixing bowl, combine 1 ½ cups flour, ½ cup sugar, melted butter, and baking powder until the texture resembles wet sand.
  3. Press three-quarters of this mixture into the bottom of your prepared baking dish.
  4. In another bowl, whisk together the eggs, 1 cup sugar, lemon juice, lemon zest, and 2 tablespoons flour until well combined.
  5. Bake the crust in the preheated oven for about 15 minutes until light golden.
  6. Carefully pour the lemon filling over the baked crust and top with the remaining crumb mixture.
  7. Return to the oven and bake for an additional 20-25 minutes until the top is lightly golden and the filling has set.

Notes

Allow to cool before slicing for clean edges. Store in an airtight container at room temperature for up to three days.
