  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 cup All-Purpose Flour
  • Zest from 2 Lemons
  • 1/4 cup Fresh Lemon Juice
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium saucepan over low heat, melt the butter and let it cool slightly before mixing in the sugar.
  3. Stir in the granulated sugar until well combined, creating a glossy mixture.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest and juice.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix this into the wet mixture until just combined.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool for 10 minutes, then transfer to a wire rack, cut into squares, and enjoy with powdered sugar on top.
