Lazy Day Lasagna: The Ultimate Comfort Food

A hearty and comforting lasagna made with no-boil noodles, rich meat sauce, and layers of creamy cheese and vegetables.

  • 12 no-boil lasagna noodles
  • 1 pound ground beef or turkey
  • 3 cups marinara sauce
  • 15 ounces ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 2 cups fresh spinach
  • 1 medium zucchini, diced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground meat until browned (about 5-7 minutes). Season with salt and pepper, then drain excess fat.
  3. In a mixing bowl, combine ricotta cheese, egg, 1/4 cup of Parmesan, and Italian seasoning. Mix until smooth.
  4. In a baking dish, spread 1 cup of marinara sauce, add a layer of noodles, then half of the ricotta mixture, half of the meat, spinach, and zucchini. Repeat layers two more times.
  5. Pour the remaining marinara sauce on top, sprinkle with mozzarella and remaining Parmesan.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly.
  7. Let the lasagna rest for 10-15 minutes before serving.

Notes

Feel free to substitute ground meat with lentils for a vegetarian version. For added heat, mix in red pepper flakes.
