Kodiak Pumpkin Muffins

  • 2 cups Kodiak Cake Pancake Mix
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard muffin tin or line with muffin liners.
  3. In a large mixing bowl, whisk together the pumpkin puree, eggs, vegetable oil, and brown sugar until smooth.
  4. In another bowl, combine the Kodiak pancake mix, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
  8. Let cool before transferring to a wire rack.

Notes
