Juicy French Onion Pot Roast

A warm and hearty pot roast infused with the rich flavors of caramelized onions and savory broth, perfect for family gatherings.

  • 34 lbs boneless chuck roast
  • 3 large onions, sliced thinly
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • Optional: Gruyère cheese, for topping

Instructions

  1. Heat a tablespoon of oil in a large skillet over medium heat and add the sliced onions. Cook until caramelized, about 15-20 minutes.
  2. Season the chuck roast with salt, pepper, and thyme.
  3. Add minced garlic to the caramelized onions and sauté for an additional 1-2 minutes.
  4. Layer the caramelized onions and garlic at the bottom of a slow cooker, then place the seasoned roast on top.
  5. Pour beef broth and Worcestershire sauce over the roast.
  6. Cover and cook on low for 8 hours, or on high for 4 hours.
  7. Once tender, serve hot, optionally topped with Gruyère cheese.

Notes

Store leftovers in airtight containers for up to three days in the refrigerator or freeze for up to three months. For reheating, gently reheat in the oven or microwave.
