Juicy Chicken with Madeira Sauce

A comforting dish featuring tender chicken breasts drizzled with rich Madeira sauce, perfect for weeknights or festive gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup Madeira wine
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 chopped shallots
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large frying pan over medium-high heat, melt 1 tablespoon of butter and sear the chicken for 5-7 minutes on each side until golden brown.
  3. Remove the chicken and sauté the shallots for 2-3 minutes, then add garlic for an additional minute.
  4. Deglaze the pan with Madeira wine, scraping up the browned bits, and let simmer for 2-3 minutes.
  5. Add the chicken broth and thyme, return the chicken to the pan, cover, and simmer for 15-20 minutes or until chicken reaches 165°F.
  6. Remove the chicken and stir in the remaining tablespoon of butter into the sauce, adjusting seasoning if needed.
  7. Plate the chicken, drizzle with Madeira sauce, and garnish with thyme if desired.
