Italian Ramen Soup

Ingredients

  • Ramen Noodles
  • Vegetable Broth
  • Canned Diced Tomatoes
  • Garlic (minced)
  • Onions (chopped)
  • Italian Seasonings (oregano, basil, thyme)
  • Protein of choice (chickpeas, shredded chicken, or Italian sausage)
  • Fresh Basil (for garnish)
  • Parmesan Cheese (for garnish)

Instructions

  1. In a large soup pot, heat olive oil over medium heat.
  2. Add minced garlic and chopped onions, sautéing until fragrant and translucent (about 3-4 minutes).
  3. Pour in the vegetable broth and stir in canned diced tomatoes, bringing the mixture to a gentle simmer.
  4. If using sausage or chicken, add your choice now, cooking for about 8-10 minutes until thoroughly cooked.
  5. If using chickpeas, add them to warm through.
  6. Stir in Italian seasonings and season with salt and pepper to taste.
  7. After the protein is cooked through, add ramen noodles to the pot and cook for 3-5 minutes until tender.
  8. Remove from heat and let the soup rest for about 5 minutes.
  9. Ladle the soup into bowls and garnish with freshly chopped basil or a sprinkle of parmesan cheese before serving.

Notes

For added flavor, consider stirring in a splash of heavy cream or fresh pesto just before serving. Store leftovers promptly in an airtight container.
