Irresistible Whipped Shortbread Cookies

Delightfully tender and buttery cookies that melt in your mouth, perfect for any occasion.

Ingredients

  • 1 cup (226g) unsalted butter, softened to room temperature
  • ½ cup (60g) powdered sugar
  • 1 ½ cups (180g) all-purpose flour
  • ¼ cup (30g) cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy (about 3-4 minutes).
  3. Gradually sift in the flour and cornstarch, mixing on low speed until just combined.
  4. Shape the dough into balls and place them on a lined baking sheet, leaving space in between.
  5. Bake for approximately 12-15 minutes, until edges are lightly golden.
  6. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  7. Dust with additional powdered sugar or dip in chocolate, if desired.

Notes

Store the cookies in an airtight container at room temperature for up to a week. Freeze for up to 3 months.
