Irish Beef Stew

A hearty and comforting Irish Beef Stew with tender beef, root vegetables, and a rich broth that warms the soul.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 large carrots, sliced
  • 4 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup stout or dark beer
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Brown the meat: In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the meat on all sides for about 5-7 minutes.
  2. Sauté the vegetables: Add the chopped onions and carrots to the pot and cook for another 3-4 minutes.
  3. Incorporate garlic and tomato paste: Stir in the minced garlic and tomato paste. Cook for about 1 minute.
  4. Add liquids and seasonings: Pour in the beef broth and stout. Sprinkle in the thyme and rosemary. Bring to a gentle boil, then reduce heat to low.
  5. Simmer to perfection: Cover the pot and let it simmer on low heat for about 1.5 to 2 hours.
  6. Finish with potatoes: About 30 minutes before serving, add the diced potatoes.
  7. Adjusting flavors: Taste and adjust seasoning with more salt, pepper, or additional herbs if desired.

Notes

Serve with crusty soda bread or Irish brown bread to soak up the delicious broth.
