Honey BBQ Chicken Rice

A delightful dish of tender chicken in honey BBQ sauce served over fluffy rice, perfect for weeknight dinners and gatherings.

  • Chicken thighs or breasts (or tofu for a vegetarian option)
  • ½ cup honey
  • 1 cup BBQ sauce
  • 1 cup white or brown rice (or quinoa/cauliflower rice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups water
  • Pinch of salt
  • Oil for cooking

Instructions

  1. Rinse rice under cold water until clear.
  2. In a saucepan, combine rice, water, and salt. Bring to a boil, lower the heat, cover, and simmer for 15-40 minutes based on rice type.
  3. Chop chicken into bite-sized pieces.
  4. Mix BBQ sauce and honey in a bowl.
  5. In a skillet, heat oil over medium heat, add chicken, and sear until golden brown, around 5-7 minutes.
  6. Add the honey BBQ mixture to the skillet and let simmer for 10-15 minutes until chicken is cooked through.
  7. Fluff the rice and serve topped with the chicken, garnishing with green onions.

Notes

For a spicy kick, add cayenne or smoked paprika to the sauce. This dish pairs well with sides like coleslaw and grilled vegetables.
