Holiday Orange Glow Snack Squares

Delightfully easy snack squares bursting with bright citrus flavors, perfect for sharing during the holiday season.

Ingredients

  • 2 cups almond flour (or any nut flour for a gluten-free option)
  • ½ cup rolled oats
  • ¼ cup honey or maple syrup
  • ½ cup coconut oil (melted)
  • Zest of 2 large oranges
  • 1 cup Greek yogurt
  • Juice of 2 large oranges

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, rolled oats, honey (or maple syrup), melted coconut oil, and orange zest. Mix until crumbly yet sticky.
  3. Press the mixture into a greased 9×9 inch baking dish.
  4. Bake for 15-20 minutes until lightly golden.
  5. While the crust bakes, whisk together Greek yogurt and orange juice until smooth.
  6. Allow the crust to cool for 10 minutes before spreading the yogurt mixture on top.
  7. Chill in the refrigerator for at least 1-2 hours or overnight before serving.

Notes

These snack squares get better after a day in the fridge, allowing the flavors to meld beautifully.
