Heavenly No-Bake Mini Key Lime Pies

Delightful mini Key lime pies with a creamy, zesty filling, perfect for summer gatherings or weeknight indulgence.

  • 1 cup graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup sweetened condensed milk
  • 1/2 cup freshly squeezed Key lime juice
  • 1 tsp vanilla extract
  • 1 cup whipped topping
  • Lime zest (optional)

Instructions

  1. In a mixing bowl, combine graham cracker crumbs and melted butter. Stir until all crumbs are moistened.
  2. Press the crust mixture firmly into the bottom of a muffin tin, filling each cup about halfway.
  3. In another bowl, beat softened cream cheese with an electric mixer until smooth.
  4. Gradually add in sweetened condensed milk and mix until well combined and fluffy.
  5. Add Key lime juice and vanilla extract, mixing just until combined.
  6. Gently fold in the whipped topping until fully incorporated.
  7. Spoon the filling into each muffin tin cup over the prepared crust.
  8. Chill the muffin tin in the fridge for at least 2-3 hours until the pies are set and firm.

Notes

These mini pies can be made a day in advance, and stored in an airtight container in the fridge for up to 3 days.
