Hearty Cheddar Garlic Herb Potato Soup

  • 1 medium onion, finely chopped
  • 4 cloves of garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 2 teaspoons dried parsley
  • Salt and pepper, to taste

Instructions

  1. Prep the Ingredients: Peel and dice the potatoes. Chop the onions and mince the garlic.
  2. Sauté the Aromatics: In a large pot, heat a splash of oil over medium heat. Add onions and garlic, sauté for 3-4 minutes until fragrant.
  3. Cook the Potatoes: Add diced potatoes to the pot and cook for another 2-3 minutes.
  4. Add the Liquid: Pour in the broth and bring to a gentle boil. Simmer for 20-25 minutes until potatoes are fork-tender.
  5. Blend to Creaminess: Use an immersion blender to puree the soup to your desired smoothness.
  6. Combine the Final Ingredients: Stir in heavy cream, shredded cheddar, thyme, and parsley. Simmer for an additional 5 minutes.
  7. Season and Serve: Add salt and pepper to taste, then ladle into bowls and garnish as desired.

Notes
