Hearty Beef Barley Soup

A cozy family classic, this hearty beef barley soup combines tender beef, chewy barley, and vibrant vegetables for a warm and satisfying meal.

  • 1 lb beef chuck roast, diced into 1-inch cubes
  • 1 cup pearl barley
  • 34 cups beef broth
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, add the beef cubes, seasoning lightly with salt and pepper. Sear until browned on all sides (about 5-7 minutes).
  2. Add the chopped onion, carrots, celery, and minced garlic to the pot. Cook for an additional 5 minutes until the veggies soften and the onion becomes translucent.
  3. Pour in the beef broth, ensuring it covers the meat and vegetables. Stir in the pearl barley along with the dried thyme.
  4. Bring the mixture to a gentle boil, then reduce heat to low. Cover and let it simmer for about 1-1.5 hours, stirring occasionally, until the barley is tender and the beef is easy to shred.
  5. Taste the soup and adjust seasonings if needed. Add more broth or water for a lighter consistency if desired.
  6. Ladle the soup into bowls and serve hot, optionally topped with fresh parsley.
