Healthy Baked Churro Bites

Delightful baked churro bites that are crispy on the outside and soft on the inside, coated with a cinnamon sugar mix for a guilt-free treat.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup plain Greek yogurt
  • 1/4 cup coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 cup butter, melted
  • 1/4 cup sugar + 1 tsp cinnamon (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together the flour, coconut sugar, baking powder, and ground cinnamon.
  4. In a separate bowl, mix the Greek yogurt and melted butter until smooth, then combine with dry ingredients.
  5. Shape the mixture into small balls and place on the prepared baking sheet.
  6. Bake for about 12-15 minutes until golden and firm.
  7. Roll warm bites in a mixture of sugar and cinnamon.

Notes

For a vegan version, substitute with plant-based yogurt and butter. Store leftovers in an airtight container at room temperature for up to 3 days.
