Greek Cucumber Tomato Feta Salad

A fresh and colorful salad combining crunchy cucumbers, sweet tomatoes, and creamy feta, perfect for any gathering.

Ingredients

  • 2 cucumbers, chopped
  • 2 tomatoes, chopped
  • 100g feta cheese, crumbled
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables: Wash cucumbers and tomatoes, slice cucumbers, and chop them into bite-sized pieces.
  2. Slice the Onion: Thinly slice the red onion. Optionally soak in cold water to mellow, then drain.
  3. Crumble the Feta: Crumble feta cheese into fine pieces in a small bowl.
  4. Mix the Salad: In a large mixing bowl, combine cucumbers, tomatoes, onion, and feta. Drizzle with olive oil and lemon juice.
  5. Season It Up: Add salt and pepper to taste, and toss gently to mix.
  6. Garnish: Add chopped parsley or dill on top.
  7. Serve Fresh: Serve immediately or refrigerate for 30 minutes to meld flavors.

Notes

Store leftovers in an airtight container for up to 2 days. Enjoy chilled and avoid freezing due to texture change.
