Gnome Mini Cheesecakes

Delightful mini cheesecakes with a creamy texture and a buttery graham cracker crust, perfect for gatherings and celebrations.

Ingredients

  • 8 oz cream cheese
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup graham cracker crumbs
  • 2 tbsp unsalted butter
  • Toppings of your choice (fresh fruits, whipped cream, chocolate sauce)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until fully coated.
  3. Press the mixture into the mini muffin tin to form a solid crust.
  4. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add the egg and blend gently until just combined.
  6. Spoon cheesecake filling into each crust and smooth the tops.
  7. Bake for 15-20 minutes until edges are set; center should jiggle slightly.
  8. Cool for 5 minutes in the tin, then transfer to a wire rack to cool completely.

Notes

These can be made a day in advance and stored in the refrigerator up to 5 days.
