Garlic Steak Bites and Potatoes

A quick and easy weeknight dinner featuring tender steak bites and crispy potatoes infused with garlic.

  • 1 pound steak (Sirloin or ribeye, cubed)
  • 2 cups baby potatoes or Yukon Golds (diced)
  • 45 cloves fresh garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Fresh herbs (e.g., rosemary or thyme, optional)

Instructions

  1. Wash and dice the potatoes into bite-size cubes, mince the garlic, and cut the steak into half-inch cubes.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  3. Add the diced potatoes, season with salt and pepper, and stir occasionally for about 10 minutes until they are golden and tender.
  4. Push the potatoes to the side and add the remaining tablespoon of olive oil, followed by the steak cubes and minced garlic. Stir and sauté for about 5-7 minutes until the steak is browned.
  5. Season and mix everything, allowing flavors to meld for another minute.
  6. Plate the dish, garnishing with fresh herbs if desired, and serve.

Notes

Experiment with different types of garlic or use sweet potatoes for added sweetness.
