French Onion Meatballs Casserole

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup Gruyère cheese, shredded
  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until just combined and form into 1-inch meatballs.
  3. In a large skillet over medium heat, sauté the sliced onions for about 15-20 minutes until caramelized.
  4. Spread the caramelized onions in an oven-safe casserole dish, pour the beef broth over the onions, and place the meatballs on top.
  5. Sprinkle shredded Gruyère cheese over the meatballs and add fresh thyme leaves if desired.
  6. Cover with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let the casserole rest for 5 minutes before serving and enjoy!

Notes

For added flavor, consider swapping the ground beef for ground turkey or a vegan meat alternative. Pair with crusty bread for soaking up the sauce.
