French Onion Chicken Orzo Casserole

A cozy and flavor-packed dish combining caramelized onions, tender chicken, and creamy orzo, topped with melty Swiss cheese.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup uncooked orzo
  • 2 large onions, thinly sliced
  • 2 cups chicken broth
  • 2 cups shredded Swiss cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and add the onions, caramelizing them for about 15-20 minutes until golden brown.
  3. Season the chicken breasts with salt, pepper, and thyme, and cook in the skillet for 5-7 minutes on each side until lightly browned.
  4. In a mixing bowl, combine orzo, chicken broth, and half of the Swiss cheese. Mix in the caramelized onions and browned chicken.
  5. Transfer the mixture to a greased casserole dish, spread evenly, and top with remaining Swiss cheese.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake an additional 10-15 minutes until cheese is melted and orzo is al dente.

Notes

Allow leftovers to cool completely before storing in an airtight container for 3-4 days. Reheat in the microwave or oven.
