French Onion Chicken Orzo Casserole

A comforting casserole combining tender chicken, creamy orzo, and sweet caramelized onions, topped with melted cheese.

  • 2 cups dry orzo
  • 1 lb boneless, skinless chicken breasts, diced
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup shredded Gruyère cheese
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté onions for 10-15 minutes until golden brown.
  3. Add minced garlic and diced chicken; cook for another 5-7 minutes until chicken is no longer pink.
  4. In a large casserole dish, combine the chicken mixture with orzo, chicken broth, thyme, salt, and pepper.
  5. Top with shredded Gruyère cheese.
  6. Bake for 30-35 minutes until orzo is tender and liquid is mostly absorbed.
  7. Let rest for 5-10 minutes before serving.

Notes

You can personalize this dish by using your choice of vegetables or pasta. Store leftovers in an airtight container for up to 3-4 days.
