Fluffy Japanese Soufflé Pancakes

Delightful pancakes with a cloud-like texture, perfect for breakfast or dessert.

  • 3 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 2 tablespoons Sugar
  • Butter (for greasing the skillet)

Instructions

  1. Separate the eggs, placing the whites in one bowl and yolks in another.
  2. Mix the yolks with milk, vanilla, flour, baking powder, and sugar until smooth.
  3. Whip the egg whites until soft peaks form.
  4. Gently fold the whipped egg whites into the yolk mixture in three parts.
  5. Heat a non-stick skillet and grease with butter.
  6. Use a round mold to pour 1/4 cup of batter and cover with a lid; cook for 4-5 minutes.
  7. Flip and cook for an additional 3-4 minutes until golden brown.
  8. Serve hot with toppings like fresh fruit or whipped cream.

Notes

Best served immediately. For a variation, add matcha or chocolate chips.
