Fluffy German Pancakes

A delightful twist on traditional pancakes, these Fluffy German Pancakes are baked for a beautiful, puffy texture, perfect for filling with fresh fruits or syrup.

  • 4 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 425°F (220°C) and place a 10-inch oven-safe skillet or baking dish inside to heat.
  2. In a mixing bowl or blender, combine the eggs, milk, flour, sugar, vanilla extract, and salt. Blend until the batter is smooth and creamy, about 30 seconds.
  3. Carefully remove the hot skillet from the oven, and add the butter, swirling to coat the bottom.
  4. Pour the batter into the skillet and return it to the oven immediately.
  5. Bake for 20-25 minutes until edges are golden brown and center is set.
  6. Remove from oven and serve immediately with your choice of toppings.
