Fluffy Brown Sugar Banana Pancakes

A delightful twist on traditional pancakes with brown sugar and ripe bananas for a sweet, fluffy breakfast treat.

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large ripe banana, mashed
  • 3/4 cup milk (or dairy-free alternative)
  • 1 large egg
  • 1 tablespoon melted butter (or coconut oil)
  • Optional: Vanilla extract for extra flavor

Instructions

  1. In a mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the mashed banana, milk, egg, and melted butter. Add vanilla extract if using.
  3. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter for each pancake and cook for 2-3 minutes until bubbles form on the surface.
  6. Flip each pancake and cook for another 1-2 minutes until golden brown.
  7. Serve warm with your favorite toppings.

Notes

For a more indulgent experience, consider adding chocolate chips or nuts into the batter.
