Flavored Dill Pickle Chicken Salad

A zesty and creamy chicken salad infused with dill pickles for a comforting and nostalgic meal.

  • 2 cups cooked chicken (boneless, skinless breast or thighs, shredded)
  • 1 cup dill pickles (finely chopped)
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 cup celery (chopped)
  • 1/2 cup red onion (finely diced)
  • 2 tablespoons fresh dill (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the chicken: If using a slow cooker, cook on low for 6 hours or high for 3 hours with salt and pepper. For air fryer, cook at 375°F for 20-25 minutes until golden brown.
  2. Cool the chicken for about 10 minutes to retain moisture.
  3. Shred or chop the chicken into bite-sized pieces.
  4. Add the chopped dill pickles, celery, red onion, dill (if using), mayonnaise, and Dijon mustard to the chicken.
  5. Mix well and season to taste with salt and pepper.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

Consider adding some cayenne pepper for a spicy twist or use Greek yogurt for a lighter version.
