Flavor-Packed Peruvian Chicken with Aji Verde & Cilantro Rice

A vibrant dish of chicken marinated in zesty lime, garlic, and spices, served with Aji Verde sauce and cilantro-infused rice.

  • Chicken thighs or breasts
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • Fresh cilantro (for garnish)
  • Juice of 2 limes
  • 2 tablespoons Aji Amarillo paste (or other chili paste)
  • 2 tablespoons olive oil
  • 1 cup long grain or basmati rice
  • 2 cups water
  • Salt (to taste)
  • 1 jalapeño (for Aji Verde sauce)

Instructions

  1. In a large bowl, combine minced garlic, cumin, olive oil, lime juice, and Aji Amarillo paste. Add chicken and coat well. Cover and refrigerate for at least 1 hour.
  2. Rinse rice under cold water until clear. In a saucepan, combine rinsed rice, water, salt, and chopped cilantro. Bring to a boil.
  3. Reduce heat to a simmer, cover, and cook for 15-20 minutes until water is absorbed and rice is tender.
  4. If using a slow cooker, cook marinated chicken on low for 6-7 hours or high for 3-4 hours. For air fryer, preheat to 375°F (190°C) and cook chicken for 18-20 minutes, flipping halfway.
  5. Prepare Aji Verde sauce by blending cilantro, lime juice, jalapeño, garlic, and salt until smooth. Adjust seasoning to taste.
  6. Let chicken rest, slice, and serve over cilantro rice with Aji Verde drizzled on top. Garnish with fresh cilantro.

Notes

Marinating the chicken overnight enhances flavor. Adjust the spice level of Aji Verde based on preference.
