Family-Friendly Sausage and Egg Casserole

A hearty casserole that combines savory sausage, fluffy eggs, and vegetables, perfect for brunch or dinner.

  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups mixed vegetables (bell peppers, onions, spinach)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup milk (whole or non-dairy)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage in a skillet over medium heat until browned, about 7 minutes.
  3. Add the chopped vegetables and sauté for 3-4 minutes until tender.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Fold the sausage and vegetables into the egg mixture, then stir in the cheese.
  6. Grease a 9×13-inch baking dish, pour in the mixture, and spread it evenly.
  7. Bake for 30-35 minutes until golden and set.

Notes

Great for using up leftover vegetables. Can be made in a slow cooker or air fryer.
