Instructions

  1. Melt Chocolate and Peanut Butter: In a medium saucepan, add the peanut butter and chocolate chips. Cook over low heat, stirring continuously until smooth.
  2. Add Sweetener: Stir in the honey or corn syrup until well combined and glossy.
  3. Mix in Vanilla: Remove the saucepan from heat and stir in the vanilla extract.
  4. Combine with Cereal: Carefully add the crispy rice cereal to the chocolate-peanut butter mixture and stir gently until evenly coated.
  5. Shape Cookies: Line a baking sheet with parchment paper and portion out the mixture into small mounds.
  6. Chill to Set: Place the cookies in the refrigerator for about 30 minutes, or until firm.
