Easy Apple Crumble Cake

A delightful combination of moist cake layered with tender, spiced apples and a crispy crumble topping.

  • 45 medium apples, peeled and sliced
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round or square baking pan.
  3. In a mixing bowl, beat the softened butter and sugar until fluffy. Add the eggs one at a time, blending well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and cinnamon, then add to the wet mixture until just combined.
  5. Toss the sliced apples in a tablespoon of sugar and a sprinkle of cinnamon, then gently fold into the batter.
  6. Pour the batter into the prepared baking pan.
  7. Mix together 1/4 cup flour, 1/4 cup brown sugar, and 1/4 cup cold butter for the crumble topping, and distribute it evenly over the batter.
  8. Bake for 40-50 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool for at least 15 minutes before slicing.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
