A Delightful Peach Puff Ring

  • 2 cups fresh peaches (peeled and diced)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix diced peaches, sugar, cornstarch, and cinnamon; let sit for about 10 minutes.
  3. Unroll the puff pastry dough on a lightly floured surface, cut into a circle (about 12 inches in diameter), and place on the baking sheet.
  4. Spoon the peach filling into the center, leaving 2 inches around the edges.
  5. Fold the edges over the filling to create a ring. Crimp edges to secure if desired.
  6. Brush with beaten egg for a golden finish.
  7. Bake for 20-25 minutes until puffed and golden.
